Mel's Zesty Lemon Pie
(if you like lemon pie, you’ve got to try this)
Dough for a double crust pie (Crisco is the best)
In a medium mixing bowl grate 2 large lemons (just the yellow part). Peel the rest of the rind and throw out. Thinly (paper thin) slice the lemons and remove the seeds.
Add 2 cups of sugar to the lemons & rind, toss and let rest 3 to 4 min.
Beat 4 eggs and add to the lemons
Pour into crust, cover with the top crust, make small slits
Bake 425 for 15 min
Reduce heat to 350 and continue to cook for another 20 min, until lightly brown
Serve with whipped whipping cream, and enjoy.
