SWEET POTATOES and LEEKS WITH ORIENTAL DRESSING
2 medium sweet potatoes peeled & cut into rounds or bite size chunks
2 medium leeks (white parts only)cut into 1/2 circles
2 large white mushrooms,sliced lengthwise into 1/2 slices (or 4-6 regular sized ones)
12 snow peas, ends removed (we add more,approx.24)
1 Tbls peanut oil
1 Tbls sesame oil(100% pure)
2 Tbls soy sauce(good quality-low salt)
Zest of one lime (grated)
juice of 2 limes (approx.4 Tbls)
Method In a steamer, cook sweet potatoes about 6 min.Add Leeks;steam about 3 min. Add mushrooms and snow peas; steam about 2 min more. Remove from steamer;plunge into cold water to stop cooking.drain to dry or dry with paper towel.
Dressing: In a small bowl,combine dressing ingredients & wisk.set aside.
To serve: Place vegetables on a platter;add dressing and serve at room temperature.
We find that the combination of lime & sesame goes so well with fish, especially Salmon!!!!!
