Shrimp Gourmet
Ingredients: 2 lbs. shelled deveined tiger shrimp 3 qts. boiling water 1 t. salt 1 T. Lemon Juice 3 T. butter 1 cup chopped onion 1 clove garlic chopped 1/2 cup green bell pepper 1/2 cup red bell pepper 10 oz. can cream of mushroom soup (made fresh if you're really ambitious) 1 cup sour cream 1/3 cup tomato sauce (as spicy as you like it) 1 cup fresh sliced shiitake mushrooms 1 t. lemon juice 1/4 t. salt 1/8 t. pepper 1/4 cup dry white wine
Add shrimp to boiling water seasoned with 1 t. salt and 1 T. lemon juice. Boil 3 minutes, no more. Drain. Melt butter in a large skillet over medium heat. Add onion, garlic, peppers. Saute until onion is transparent. Add remaining ingredients. Reduce heat, stir and simmer gently for 5 minutes. Serve over basmati rice. Variation: substitute fresh boiled lobster cut into 3/4" chunks for the shrimp.
